• Simple Vegan Crepes (recipe located in this chapter) *Note: double the recipe
• 2 cups of sliced mushrooms
• ¼ cup of diced flat leaf parsley
• 1 tbsp. thyme
• 1 minced garlic clove
• 10 oz. fresh chopped spinach
• 5 oz. Gluten-free goat cheese
• 2 cups of Gluten-free mozzarella cheese
• 3 tbsp. olive oil
• Salt and pepper to taste
Directions
1. Prepare Simple Vegan Crepes according to the directions, make sure recipe is doubled

Add parsley, thyme, garlic, salt, and pepper. Cook for 1 minute. Reduce heat and add in spinach. Cover and cook until spinach begins to wilt.
5. Uncover and add the goat cheese to the mixture, continuously stirring until the cheese melts.
6. Oil a 9 x 13 baking dish.
7. Place a crepe on a flat surface and spoon a portion of the mixture down the center. Roll crepe up tightly and place seam side down in the baking dish. Repeat process.
8. Once crepes are completed and are in the baking dish, sprinkle with mozzarella cheese, cover with aluminum foil, and bake for 15 minutes.
