How does the addition of sodium citrate and changing pH affect the ability of different foods to undergo spherification?
II. Background Research
Molecular gastronomists use special techniques, ingredients, and cooking principles to make certain chemical reactions occur. These reactions, produce new flavors and textures. One popular technique is cooking meat sous vid, a French word that means ?under vacuum?. Another technique is spherification (which the act of making liquid-filled beads takes part in). The words of a writer at Gourmet Magazine says that they, ?Explode in the mouth with a pleasingly juicy pop? (Madrid). This paper will talk about the science of spherification.
Molecular gastronomy is a method of applying scientific …show more content…
In metabolism acidosis, the acidity of the blood, urine, and other bodily fluids become too high; it happens when ?the body is producing too much acid. Too little acid or the body is producing too much acid. Hypernatremia, or elevated sodium in the blood, this can be another possible side effects associated with sodium citrate (Sodium Citrate). Sodium citrate is known for it?s mildly tarte salty taste. Sometimes it's called, "sour salt?. Sodium citrate dissolves easily, making it suitable for a variety of food and beverage ??? applications. Sodium citrate is used in many different places in food and beverage manufacturers though it's mainly used as a food additive for its flavor and/or as a preservative. Sodium citrate is also used as the pH buffering agent in different places like gelatins or mini milk containers. Also used as an anticoagulant, sodium citrate is also ideal for keeping the fat globules from sticking together in the manufacturing of many things such as ice cream (Sodium …show more content…
People with more serious cases of hemophilia usually get shots of the fact or that they are missing ? known as clotting factor replacement therapy ? to prevent a lot of bleeding. The clotting factors are transfused through in IV into a vein, and can be given in the hospital, the doctor?s office, or at home. Scientists are currently working on something called Gene therapy for people who have hemophilia, Disorders that cause little bleeding problems may not need any treatment
