So what is celiac disease? It is an autoimmune disorder in which a person has a hard time digesting gluten and can lead to discomfort or even damage to the small intestine (Celiac Disease Foundation). Celiac disease has also been around for basically as long as records show, about two thousand years. “Dutch pediatrician, Willem Karel Dicke, MD was recognized in 1952 for linking the ingestion of wheat proteins as cause of celiac disease (History of Gluten Induced Conditions).” “Gluten is a protein found in things like rye, wheat, and barley. It’s now being said that much of our population may be gluten-intolerant (hence all the new “gluten-free!” items popping up everywhere). Over time, those who are gluten intolerant can develop a dismal array of medical conditions from consuming gluten: dermatitis, joint pain, reproductive problems, acid reflux, and more (The Beginners’ Guide)” If Celiac disease is genetically passed on and is becoming more and more prevalent in society it would explain why we have evolved from paleolithic humans who had no ingestion of wheat proteins. Humans need to put their brain to rest in order to function during the day and not getting enough sleep can be detrimental to one's health. “Scientists have found that our diet directly affects how well we sleep (Jones).” Not getting the proper nutrients such as calcium, selenium, and vitamin c are all linked to less deep sleep and more tossing and turning during the night.
