Next you will create a sugar solution using corn sugar or table sugar. The sugar is boiled in water, and then cooled. This solution is called the “priming” sugar. Make sure to properly follow your recipe because too much sugar can cause the beer to over-carbonate, which will result in exploding bottles. The priming sugar is then poured into a separate botting container. You will place the fermenter a few feet above the bottling container because gravity will allow for the beer to be syphoned into the container. Make sure the end of the syphon is placed at the bottom of the container because this will allow the beer to mix well with the priming sugar. The “primed” beer is now ready to be syphoned into the sanitized bottles. Keep the bottling container a few feet above the bottles, and pinch the syphoning tube while switching from bottle to bottle to avoid spilling. Bottle caps and a bottle capper do not come in the kit, but they are very affordable, and very useful if you plan to continue making your own beer. You use the bottle capper to securely close the bottles, and then leave the bottles in a dark place for about 2 more weeks while the beer finished
