I realized that everyone working there was laughing, smiling, and speaking with everyone! The Taco Man, and a few others, cooked each order exactly the way the person wanted. They cooked the meat, onions, peppers, etc. on grills and on a table next to them they had the metal bins that have the warmers under them. In the bins was rice, beans, and cheese dip. They cooked those inside and they were fresh! The workers made sure to keep the areas neat and refill the bins every so often. Alice brought us our food, and as soon as she walked away I took my first bite of an authentic street taco. I cannot even begin to explain how great it was! I could eat an endless amount of them and not ever complain. I enjoyed my food and listened to what I call the ‘happy loud’. Families, couples, friends, and kids were laughing and talking. Everyone was so happy. Music was playing, cars were driving by (some even honked), and it was simply beautiful. Mostly everyone that works there appeared to be family, and you could look at them and tell they felt nothing short of blessed.
