Ingredients:
3 tablespoons butter, divided
4 tablespoons extra virgin olive oil, divided
2 pounds beef sirloin steak, sliced into strips
2 tablespoons onion salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic salt
3 tablespoons fresh onion juice
3 tablespoons dry white wine
1/2 pound sliced fresh cremini or white button mushrooms
For Sauce:
2 tablespoons butter
2 tablespoons extra virgin olive oil
3 tablespoons Maya's GF Flour Mix No.1
2 cups unsalted or low sodium beef broth
1-1/2 cups cold water, divided
2 teaspoons prepared mustard
1/3 cup sour cream

Add half of the marinated beef and cook, stirring often, until the meat is just browned, about 4 to 6 minutes; do not overcook. Transfer browned beef to a large, heavy pot and repeat process with 1 tablespoon butter, 1 tablespoon olive oil and the remaining marinated beef. Transfer browned beef to the pot.
* Remove the skillet from the heat. Add remaining 1 tablespoon of the butter and 1 tablespoon of the olive oil to the skillet and stir until the butter melts. Put the skillet over medium heat and add the mushrooms. Cook, stirring occasionally, until the mushrooms release their liquid, about 5 minutes. Add mushrooms to the pot with beef.
* Add the prepared sauce to the pot, mix well to combine and bring to simmer. Gently simmer, stirring occasionally, for 30 to 35 minutes. Taste and adjust seasoning if desired.
* Meanwhile, cook the gluten free noodles according to the package directions in the boiling water until barely tender. Drain and return to the pot. Off the heat, add 1 tablespoon butter and stir to melt.
* Serve over the cooked noodles, sprinkled with the chives if desired.
