- Production is limited to one distillery owned by Pernod-Ricard. - It was a PGI until 2015, however P.Ricard did not renew its status and lost it. - It is still a well recognised brand name. |

What base ingredients can Gin be made of? |
* Grains = give a crisper feel, especially for premium gin. * Molasses = give a softer feel. (however it is much harder to see the different influence of the base material with flavoured spirits) |

which are the main botanicals used in Gin? |
- Juniper = only one that must be present legally. - Coriander seed = spicy notes, premium gins. - Angelica root = musky, earthy, woody aromas. - Orris root = earthy, violets, leaves. - Dried citrus peel = first aroma released when gin is diluted. |

(Most producers put the botanicals into the water/alcohol mix) 1= some producers start the distillation immediately (Tanqueray, Gordon). 2= some distillers let the botanical macerate in the alcohol for up to 24 hours (Beefeater). 3= carterhead still: the botanical are suspended in a basket either in the neck of the still or between the neck and the condenser (lighter style of gin). |

Difference between Gin / Distilled Gin / London Gin? |
* Gin = made from ethyl alcohol & flavorings, doesn't have to be re-distilled. flavorings can be natural or artificial. additives & sweetening are not prohibited. water is added to reduce the alcohol strength. gin may be colored. * Distilled gin = made from ethyl alcohol re-distilled with natural flavorings. additional flavorings may be added after the distillation (natural or artificial). additives & sweetening are not prohibited. water is added to reduce the alcohol strength. gin may be colored. * London gin = made from ethyl alcohol re-distilled with natural flavorings. flavorings must all be natural, and non may be added after distillation. sugar may be added (max 0.1 g/l). water is the only approved additive. gin may not be colored. can add the term "Dry". |

- Juniper flavoured spirit protected by geographical indication (Belgium, Netherland, north of France). - can be made using either a 96% abv spirit, or a low strength grain spirit called Moutwijn. - may be aged in oak barrels. - natural or nature identical flavourings may be used. - minimum bottling 30% abv. - classified as Jonge or Oude. |

Difference between Jonge and Oude Jenever? |
- Jonge = max 15% moutwijn, must be colourless, can be sweetened to max 10% g/l. - Oude = min 15% moutwijn, may have colour, may use caramel, can be sweetened to max 20% g/l. |
